Chickens can be found in the main town of Serbule. A few are also roaming around Ivyn's farm west of the town.
Skinning a chicken can produce a clump of feathers.
Be aware that domestic animals in town are owned by somebody, and it's quite rude to kill them! Of course, they can't get upset about it if they don't see you do it.
